KYOTO SALMON

one third cup soy sauce
one quarter cup orange juice
2 tblsp ketchup
one tsp lemon juice
half tsp mustard
one tblsp green onions
one minced garlic clove
half tsp minced ginger
4 pieces salmon
one tblsp olive oil
In a dish mix soy sauce, orange juice, oil, ketchup, lemon, mustard, onion, garlic, ginger.

put salmon in and marinate for hour or longer then grill or bake the salmon and pour over marinade. and reduce heat.

Wish this had been on here a couple of days ago as was having salmon for dinner - couldn't find anything interesting in my books so just plummped for plain old baked, was ok but will defo try this next time.

Sounds like a good concoction....will definately try it this weekend!  

Heres my boring salmon recipe:
Nandos peri peri sauce extra hot.  Marinate for a while, then stick it in tin foil and bake in oven.  Its very nice if you make a creamy mushroom sauce with lots of mustard in it.

Thats about as adventurous as I get.

I reckon it'd taste good with duck too- orange brandy duck is my absolute fave!

Interesting recipe and don't want to be an old fuddy-duddy but I think you'd be risking serious food poisoning by pouring the same "raw" marinade back over the cooked fish. Much safer to divide it into two batches beforehand. Throw away the marinade that the fish sat in before cooking.

I apologise if you did not understand. Of course you would not add the raw marinade to the cooked salmon. You add it back to the dish and cook it out. I do apologise and thank you for pointing out my mistake Cranny Faddock.

excuse me, but at what temperature and for how long should you bake the salmon for? also, big are the salmon pieces?

Super! Thank you for the recipe. Here's my 'boring' one, marinate skinned salmon fillet in juice of lemon + tsp of sugar for a few hours. Before covering with foil and putting in the over ad a good dollop of pesto (Barilla is the best) and spread it over top. Bon apetit!

To cooking person.

I finally got around to trying your recipe (well my version - forgot the onions and only had dark soy sauce - wasn't sure which one).  I grilled the salmon rather than baking it - DELICIOUS.  Even the hubby remarked how nice it was.  So thanks for that.

Will now try the other recipe using pesto.

My fave salmon recipe, which is Mediterranean. It's low fat and delicious!  

Heat a tablespoon of olive oil in pan.  Saute 1 chopped onion for 2 mins.  Add 2 cloves chopped garlic, 1 chopped red chille, 3 chopped ripe tomatoes, some fresh or dried basil, 1/4 cup pitted black olives, 1/2 cup dry white wine and some black pepper.  Heat these ingredients and then add bite-size chunks of salmon.  When salmon is cooked, serve with rice or couscous.  Serves 4.
