Hi, does anyone know how to temper chocolate?

That is melt it then re-harden it to various shapes.

I will  be willing to learn it hands on from you or anywhere else (just tempering, not the other filling making stuff)

thank you for that suggestion but done that and have got a couple of books on it but I can never get the chocolate to re-harden.  

So what I really need is a hands on experience.

I went to one of the cooking schools in Holland Village area offers a class in chocolate making which includes tempering. The class is part demo, with a good view of the tempering. Then hands-on to form chocolates. The chef who runs the class is very helpful and will go through it with you until you understand.
