Leftover rice kept in fridge turn hard even after defrost, making them inedible. Why?

I am staying alone but it's almost impossible for me to cook a one person's share at times.  

Is there a better method of storing leftover rice just for a night?

Seal the portion of rice up quickly after cooking so it doesn't dry out. Put in fridge when cool. In micro dish with cover (not sealed) add 2tblsp of water to the rice. Microwave 3 mins (or more/less dependent on your Microwave oven). Sorted

Put your cooked rice in the fridge and use it the next day to make fried rice.

I cook rice in large portions and use it up to several days after. The trick is to cool it then store it IN A COVERED CONTAINER. Microwave it when you need it.

If you still have rice that turns hard, use it in mee soup, only with rice instead of mee. Or use it for fried rice.

We use left over rice to make fried rice. Rice is only good if it is newly cooked not heated.
