Hi, I will be making coleslaw salad as my share/contribution for a potluck (barbeque) dinner for about 40 persons on this coming Saturday evening. I have made small amounts of coleslaw salad for my own family consumption before. However, I have no idea how much cabbage and carrot (and pineapple? for Hawaiian coleslaw?) must I buy in order to make enough coleslaw salad for 40 persons. Also, how much mayonnaise (and yoghurt? or sour cream?) do you think I will need to buy in order to make enough salad dressing?

I welcome any advice/recipe that will help me make a nice and yummy coleslaw salad. Remember, it is for this coming Saturday, so I have not much time left...

I'd go for 3 whole cabbages, just judge the carrot as you grate it in.

If you want ready made dressing go for the Australian Kraft Coleslaw (the US one is yuck!!!) You can get it at Jasons.

I also add spring onion and apple to my coleslaw.

I will try adding some spring onion and apple as suggested by you. May be, I can also try adding some red cabbage and bits of red pepper to make the salad look more colorful, what do you think?

How many bottles of mayonnaise (Kraft size) should I buy? Will two bottles be enough? I do not normally use mayonnaise my cooking, so I will like to avoid having remaining amounts in my fridge.

I would think 1 would be enough... not sure though. You dont want it over dressed or else it is all soggy.

yes, grated apple is very nice in coleslaw but would personally not add red pepper or any pepper.Raw pepper had a bad affect on lots of people, including me ( v. bad wind) ......and 1 mayonnaise is plenty I think....if too much if goes very soggy and unpleasant.
