Can Copha be used in baking instead of butter or margarine. The only uses I can find on the net are for uncooked stuff that uses the Copha to set the ingredients BTW you wouldn't believe how bad Copha is for you in the unsaturated fat/trans fat dept!!

Back to my question, is Copha a substitute for butter in a recipe such as for brownies.

 CHOCOLATE CRACKLES #1

Recipe By     :
Serving Size  : 6    Preparation Time :0:00
Categories    : Desserts

Amount  Measure       Ingredient -- Preparation Method
--------  ------------  --------------------------------
   8       oz           Copha
   8       oz           Icing sugar
   3 1/2   ts           Cocoa
   5       c            Rice Bubbles
     1/2   c            Sultanas (optional)

Combine sifted icing sugar, cocoa, rice bubbles and
optional sultanas. Melt copha and add to ingredients
and mix thoroughly.  Spoon into paper cups and allow
  to set.

  NOTES:

  *  A traditional Australian sweet snack -- Mention
this recipe to an Australian abroad and he will
instantly get homesick.  Yield:  serves 6.

  *  Rice Bubbles are called Rice Krispies in North
America.  Icing sugar is confectioner's sugar.
Sultanas are like raisins.  Copha, it would appear, is
utterly unavailable outside Australia. It is a
partially-solidified shortening made of coconut oil.

: Difficulty:  easy if you can get the ingredients.
: Time:  5 minutes preparation, 1 hour cooling.
  : Precision:  approximate measurement OK.

It is made from solidified coconut oil.  Yuk, full of trans and saturated fat.  You would be far better using butter, i think.

Done.
If I'd had sufficient butter I would have used it! I had not quite enough for the recipe but as the butter needed to be melted I made it up with Copha. My searches indicated that it would sub for melted butter but wouldn't cream with sugar like butter would.
50 brownies were urgently needed by 5pm!
Thanks

Old Mike, you're right. I'm in tears remembering birthday parties of my childhood. I'm going to make some for my son's 2nd birthday coming up soon. Thanks for the recipe!

Old Mike, thanks, you are right it does make me homesick.

You did forget one vital ingredient though.  Coconut

It should be
4 cups of rice bubbles
1 cup of dessicated coconut
and in case anyone is unsure that is 3 tablespoons of cocoa.

happy crackling
