Pre-heat oven to around 220 celsius. Take your lamb joint( I prefer a leg ) and make small incisions with a knife. Peel and slice some garlic and tuck into the incisions with some rosemary sprigs. Season Lamb and place in oven. Roast according to size for about 25 minutes to the pound(450g) Accompaniments for lamb which go well are mint sauce or redcurrant jelly. Hope that helps.

Was just wondering if there is any way to jazz it up a bit?  I know lamb is cooked to appreciate the lamb, but when doing lamb for a few friends for dinner, any ideas on different presentation/accompaniments/new angle on the dish?

My favorite way to eat leg of lamb is to cube it, skewer it, and grill it.

Before grilling, marinate for a few hours in the following:

1 clove garlic, crushed
1 teaspoon minced ginger
juice from one lemon or lime
2 Tablespoon peanut oil
1 Tablespoon soy sauce
1Tablespoon sesame oil
1 teaspoon each:  salt, curry powder, oregano, cummin, coriander, tumeric  (If you don't have all these spices on hand,  no worries.  Use what you have.  This is a forgiving recipe.)

If using bamboo skewers, soak first in water so they won't catch fire.  Grill or broil in oven until done.
