Thought I would share this great banana cake recipe.
4 large ripe bananas
125g soft butter
250g self-raising flour
200g caster sugar
3 medium eggs
3 tbsp golden syrup
Pre-heat oven to 170 celsius, gas mark 4.
Grease a large loaf tin.
Peel bananas and blitz in food processor, add all other ingredients and blend. Scrape sides and blend again until everything is mixed in.
Spoon into loaf tin and bake for 1 to 1 and a half hours, until well risen and firm to the touch. Cool for 10 mins and turn out onto a wire rack. Serve warm. Enjoy!

Thanks, I have some bananas in the fridge which are too brown to eat, so I'll give it a try.

I tried this recipe today but the cake comes out very heavy and stodgy. Not cakey - I suspect there are too many bananas so the cake won't rise.

Strsnge, every time I've made it, the cake has risen and been very moist

"tried it" I expect you over did the mixing in the food processor. If you let it run too long all the air gets quizzed out.
