Does anybody have a recipe for dipping sauce for spring rolls? I'm thinking of the kind you get at thai restaurants - tangy, with bits of chili etc. floating around. TIA

OK, you have actually asked for two different dipping sauce recipes as the thai dipping sauce is difference to the vietnamese dipping sauce.

For the thai sauce all you need is

1. fish sauce (100ml)
2. 4 chopped red birds eye chillis
3. lime juice (2 limes)
4. 1 spoon brown sugar

you can adjust the amounts to taste

for vietnamese dipping sauce it is called nuoc cham(slightly sweeter and less hot)

2 tablespoons fresh lime juice
3 tablespoons Vietnamese fish sauce
3 tablespoons water
2 tablespoons sugar
1 garlic clove, finely chopped
1 large red chilli, finely chopped
1 spoon grated carrot(optional)

Stir together all ingredients.

I think the thai one is a cucumber sauce? I'm not sure if thats the one you mean but it is my fave.

My sauce I make is:

Sushi seasoned vinegar sweet type (use this as the base)
Sweet Chilli sauce
cut up small red chilli
Lime juice

Mix together:
- juice of a lemon
- 1 tsp red chilli, chopped
- 1 tsp ginger, grated
- 1/4 tsp chilli powder (adjust to taste)
- 1 tsp tomato paste
- 1 tsp fish sauce
- 3 TBSP water
- some chopped coriander

I use this for Vietnamese fresh roll and people love it:

hoisin sauce
sweet chilli sauce
freshly squeezed of 2 large lime juice

I made this dip a dozen times and my family and guest loves it.

                    1 tblspn fish sauce
                    1 tblspn light soy sauce
                     4 tblspn calamansi juice [small limes]
                      1 medium size  red onion finely chopped
                       2 chilli padi , finely chopped
                        1 tblsp finely grated ginger             
                         1 tspn brown sugar
