Hi everyone,
Want to make lasagne and need to find the fresh sheets, (like the "Latina" brand in Australia)... has anyone seen fresh sheets anywhere?

If you have time, make them yourself. Here is my fettucine recipe which you can use for lasagne sheets.

1 & 1/4  C of SOFT flour
1/2 tsp salt
2 large egg yolks
1/2 tsp olive oil
1/4 cup water

Mix all ingredients, until it comes together into a dough. Knead for a few minutes, wrap in cling film and refrigerate for an hour (doesn't matter if it's longer).

Roll out dough till it is the thickness of lasagna sheets (about 1mm) cut into correct size.

You can buy plain flour in different grades, soft is for pasta and noodles. Harder flour is for bread. It will state SOFT flour on the pack... I have bought it here, it makes the texture more silky. If you get extra soft, just mix a little ordinary plain flour in.

I don't think I've ever seen soft flour here, where is it available?

I have a pasta machine that has sat on a shelf for years waiting for me to find time. The one and only time I tried making pasta following the instructions that came with the machine, it became very soft and noodlelike which put me completely off - I'd appreciate tips on where I went wrong..

I get it in the baking section of fairprice.

Maybe you cooked the pasta too long, it needs at most a minute. I dont use a pasta maker just cut it up myself.

Do you need to dry the pasta before cooking it?  I read on the internet that you need to.

Pasta is easy to make:

500g plain flour
4 eggs

Mix.

Add small amount of water, only if necessary to form a dough.

Knead.

If not using pasta machine, knead until dough like.

If using pasta machine, cut a small amount and put through machine at steadily smaller settings - my mother always insisted on a minimum of 6 roll outs.

Lay out pasta on table and let dry for 30 minutes. Sprinkly small amount of flour over pasta.

cook. (or freeze pasta)

Humidity will greatly affect the pasta. Try to do all of this in aircon if possible (but not too cold!)

I never dried mine, did put in the fridge, and dust it in flour once it's cut.

By the way the recipe I gave serves 2 only.

Add to rapidly boiling large pot of water, as soon as the water reboils its ready.
