Did have... will have to see. From memory it's just mashed potato an egg yolk and flour.

YUMMO though, can't be stored in the fridge cos it goes grey... found that one out last time I made it...

You can get fresh lasagne sheets at cold storage in Tanglin Mall. You will find them in fridge together with other pasta products. Da Paolo deli in Holland Village also sells fresh pasta.

1kg potatoes
2 egg yolks
2 tablespoons parmesan cheese
1-1/2 cups plain flour

Prick potatoes and leave skin on - put in oven and bake until tender.  (do not boil potatoes as this gets them too soggy) Peel off skin.  Mash very finely - do not use food processor - I use the masher I had for baby food. Add egg yolks and Parmesan cheese and mix.  Move mixture to a lightly floured surface and slowly add flour until dough forms.
Do not use too much flour and do not over knead.

Roll out small portions like "snakes" about 1 and a half cm thick.  Cut them in small pieces and roll onto a fork to get indentation.

Boil salter water and drop in gnocchi.  When they come to the surface (about 2 minutes) they are ready to eat.  Take out with a slotted spoon and add sauce and eat.

OR place on floured tray, on single level and freeze immediately. (once frozen, you can put into portion sizes). When you want to eat them, place in boiling salted water straight from the freezer.  They will keep for months.

My mother would also add butter to the potato mash mix to make it creamier - that's up to you.

Use good quality parmesan cheese - it makes the world of difference.  (ie, dont use the Kraft stuff)

Gnocchi recipe:

Forgot to mention that humidity will play a bit role in the making of the dough.  Try to make the gnocchi in an airconed kitchen or when it's not too humid - resist the temptation to keep adding flour to the dough.  It will just make the gnocchi taste yucky.

I tried a recipe for fresh pasta and it turned out really well.  Do you have a good sauce recipe to go with fettucine?

Or a sauce for gnocchi.  I haven't tried to make gnocchi yet but would like to have a go at that too.

is known as top flour here.  Just look for packs at supermarkets that state top flour.

Hi OP,

I saw fresh sheets at Tanglin Mall Supermarket. They were an Australian brand, forgot the name, sorry.

They were at the corner of the last aisle, beside the milk.

Found e  St Remo large lasagne sheets at Fairprice..$3.80,250gm or a 4pcs pack..can't wait to bake my first Lasagne tomor..cheers..
