Was aghast to discover that my bottle of very expensive truffle oil is going to expire in a few months. I use it for one or two recipes.

Anyone have any recipes they'd care to share to help me to pour it down my throat rather than down the drain?

Good god, ditto here! Reading your post sent me to my oil shelf and I found the same to be the case here. Unfortunately I dont have any recipes for it, bought it and never used it yet. Help!

It goes well with anything.  You can add it to soups or salads or pastas to make something simple/boring - divine.

Eg Cauliflower soup (onions, cauliflower, chicken stock boiled and pureed) drizzle this on top before you serve.  Great starter.

Alternatively, just Google search "Truffle Oil" and "recipes" (I would add "Italian" in the search, because I like Italian food).  You will have so many hits you won't know how to choose.

To be honest it might not taste quite so good, but it won't really expire if it has been stored correctly (out of heat and light).

Add some to risotto, it makes mashed potato taste great!

To prevent oils from becoming rancid(if they taste "off" they are rancid) store them in the refrig.  They should last much longer than the expiry date if kept chilled.
