I have a coeliac vegan friend coming to stay (also no peanuts or cashews tolerated), main dish recipe ideas are sought please. Already thought of veg soups, refried beans with salsa, guacamole and corn tortillas (can you buy here or must I make?), veg curry and rice and am inventing potato bakes. Can anyone add ideas/recipes? Please.
Only desserts I can come up with are fruit and sticky rice. I guess some kueh type things might work...recipes?

Just had my in-law through with the same problem.

She can only drink un-wooded chardonay.

I made from scratch some nice indian food, chick peas, eggplant, saffron rice.

Also roasted potatoes with rosemary and nice salad with baby corn, snow peas.

Home made hummus with vege stick dip, eggplant dip, yoghart dip with cucumber.

You can make nice salad dressings with added spice with cumin/corriander powder (surf the net for gluten free salad dressing recipes).

Also baked pumpkin with middle filled with mushrooms/garlic.

Coelic cannot eat lentils

Green salads with orange segments.

make sure they get enough iron.

Also, if cheese is OK.  You can buy gluten free pasta and make maccaroni cheese.

And.... don't even think about refrieds unless you are making them yourself, anything out of a can will contain some sort of thickener or additive.  

A tomatoe, kidney bean casserole/bake.  Beefed up with some rice/gluten free noodles noodles broken up.

Grill some eggplant circles and make burgers.

Basil Pesto put in dug out potatoes

And....

Soya sauce has wheat in it.  However if you find some without wheat and it does exisit let me know please where you find it.

Yes, everything I will make from scratch to be sure, tortilla press needs an outing! Not found gluten free soy sauce yet but have only just started looking. Figured health food shops would have it..no?
No yoghurt or cheese allowed. Have yet to find a dairy free margarine suitable for baking, have found dairy free marg spread. Got the quinoa, gluten free flour...am on a roll.

The guest is a vegan coeliac - you recommend cheese?

Also, why can't coeliacs eat lentils - there is no gluten in lentils so I am at a loss to know why they are off the list?

Soy sauce without gluten - Tamari made from pure soy beans only NO WHEAT.  easily available, everywhere.

Please, please tell me you are not a coeliac because you have obviously been given no dietary help at all or even worse, you are not the caregiver of a coeliac!

I know I am sounding harsh but your information is rather incorrect.  If you want help, there are a lot of coeliacs on this board who I am sure can help.

Oh and just to be totally picky - unoaked chard.... OK?

To OP rant over; to poor Try this (sorry)

think Mediteranian - lots of olive oil, char grilled veges (very easily done in the oven) risottos - with veges and you can serve the cheese on the side for the non-vegans.  Vege sushi with TAMARI soy sauce.  You can get pure (and organic) corn chips here - no need to make.

Desserts - little at a loss here, I never eat them!  Fruit...  You can get vegan gelatin to make desserts, you can also get a vegan chocolate (sorry, the name escapes me).

Good luck - also, this is a very specialised diet - be led by your guest!

Really sorry, but I have to restate this LENTILS ARE GLUTEN FREE - you can do a lot with lentils and veges and they are incredibly good for you.

Oh one more thing - add a squeeze of fresh lemon to, Oh almost everything, makes a wonderful difference.

Gosh I'm just trying to help, my MIL visits us yearly and for 3 weeks every year I cook her this type of food.

With the wine, in sav blancs and other more fruity wines they place an additive in the wine to keep the fruity flavour.  My MIL finds that this un oaked is the type she can drink.  

Lentils, please double check the coelic website as my MIL cannot eat these but chickpeas ok.

And finally, we found Ah Tengs at Raffles excellent for making a very bland fried rice they had dealt with us before, Wine Garage next to Brewerkz was not so good.  On first visit everything went fantastic and a return visit my MIL did get sick with 20  minutes.

Forgive me, I wrote all of that at 10pm and beging a vegetarian myself 'foolishly'
suggested cheese and now are getting really nasty replies.  Last time I try and help.

Try this - I apologise for my kneejerk reaction.  It was late, wasn't it.  I didn't proof read what I had written and now see how very rude I was.

Pulses of which there are over 100 including legumes are gluten free.  A quick google or check on one of the coeliac web sites will confirm this for you.  I can't post a link as this will be deleted.

Thanks for trying to help.

There is no problem if folk recommend something that turns out not to be suitable/correct, I will just take what is useful.

What I'd really love help with is actual recipes of main event dishes. I have loads of ideas for what I consider side veg dishes, roasted veg, tians, stuffed peppers etc because I regularly cook  these, ditto the carb element of a meal eg polenta, gnocci. What I lack is the protein provider; actual tried and tested, tasty lentil and bean type stews/casseroles/bakes.

Dessert is covered, local ones are quite suitable with a bit of a tweak.

Corn on the cob, stuffed mushrooms- use herbs, tomatoes, soy cheese. Gluten free pasta with a pumpkin and pine nut sauce, or a pesto, mushroom and pinenut sauce, stirfry veg and tofu or rice noodles, Chargrill vege skewers- eggplant, cherry toms, mushrooms, pineapple, capsicum, onions and BBQ. Can serve with a satay peanut sauce- if she can eat, green curry vegies and rice.

Dessert- Soy Icecream- it's pretty yummy, non gelatin jelly, fruit, baked apples with caramel syrup, apple crumble- where the crumble topping is made with cornflakes, coconut, brown sugar and walnuts/peacans crumbled and heated poured over stewed apples- nice with the soy icecream. You could make parfaits or trifle with layers of jelly, fruit, icecream and gluten/dairy free biscuits.

Baked Beans for b/fast (If she likes these she'll be set for protein) Otherwise soymilk banana, mango, strawberry smoothies, add pumpkin seeds, pinenuts, sunflower seed, seasame seeds, almonds and other nuts to everything- stifries, salads, pasta, dessert whatever. You can use tofu etc, surely you can get non-dairy yogurt here?

There's always Moes or vege sushi for a take-away when you are out and about.
