Any fans of the Canadian BBQ show "Licence to Grill" here? I'm wondering if anyone without fancy gas cookers have tried his recipes on plain old Singapore charcoal BBQs? I'd love to try smoking some roasts or ribs, but not sure of how much hassle it would be juggling make-shift covers, meat thermometers etc etc

i am a big fan of License to Grill. i have a gas grill w/o a hooded lid, so i figured the smoked meat receipes were out of the question. my husband just bought a digital bbq thermometer when he was back in the states, so he's dying to try it out. maybe we'll have steaks next week... anyone like another canadian cooking show, Chef at Home?

Sadly we haven't tried his recipes but always write them down for when we go back to Canada for the summer and can try them with a BBQ and smoker.
I want to be his friend!!!

I think you could make do and create a makeshift smoking lid with those deep aluminium trays they sell in all the supermarkets. might not be enough room for the smoke to circulate though, or line a cardboard box with a lot of foil??? I'm also wondering if you could use a cheap old deep pan with a tight lid and one of those gas cooker rings to lift the food off the smoke pouch, then smoke it indoors on a gas hob(just dont open it till you get out to the grill to finish things off).
Or cheat and use liquid smoke. Do they sell that here? Always tried to avoid it myself.

I've seen him with various ethnic groups in his back yard...a healthy mix of friends if you ask me... and have seen him cook some crazy carribean dishes...too spicey for this white girl from the praries!
C'mon...tent that meat!
