Prima flour in the plastic bags, keep it in a tupperware container, never had any problems

I always put my (Prima brand) flour in the fridge. My muffins always turn out nice and moist. I doubt it is the refrigeration that ruined your muffins, maybe it is the way you mix your ingredients.

Baking here can be challenging for a variety of reasons. The humidity, the ingredients -- all of it. I think some experiemntation is a good idea -- then stick with a recipe that works. Freezing your flour should make no difference at all.
