My son loves chicken rice but unfortunately when it comes to cooking asian food, I am not that great. The other day he had a delicious bowl of rice with some chicken bits, veggies and a little broth.

Does anyone have some similar recipes to this or other great recipes I can cook for my 3 year old.

Can I do it in a rice cooker?

every week i make a large stock pot of chicken stock. I then freeze it in cup size containers and use it in rice and chicken like your son eats, make a broth with noodles, I put it in mashed potato, and even in my spaghetti sauce.

The thing I love about a properly home made chicken stock is that it is so healthy.
I use a couple of packs of chicken bones and one pack of chicken feet, celery, onion and carrots. I add a dash of vinegar to help pull the calcium and minerals out of the bones 1/2 an hour before I start to cook it. Then I cook it all day. I always use chicken feet as they have a lot of gelatin which aids digestion.
Then I strain it all so it is a clear broth. It's great for soup bases as well.

My daughter doesn't like milk so this is one way to get calcium into her.

I do a chicken rice recipe in the microwave and rice cooker. Brush chicken breasts with a mixture of dark soy and sesame oil (not too much sesame), place in microwave dish with a little chicken stock and cover.  Microwave for six or seven minutes depending on quantity (I usually do three breasts).  Cook the rice in your rice cooker with chicken stock, garlic, ginger and a little peanut oil.  Slice the cooked chicken and serve on top of the rice with cucumber and chilli sauce.

 That sounds good. You can also take a few chicken breasts and poach them in chicken broth, cool them and slice them then serve them with lettuce leaves and any sauce you want (chilli,black bean etc), minced garlic or ginger, green onions. Wrap the slices in the lettuce leave, add whatever flavouring you want and fold in ends of the leaf! You could also use rice wrappers I guess and add cellophane noodles or carrots cut into matchsticks etc.
  Any good gumbo recipe might also hit the spot!

This is one chicken recipe that has to be cooked at least once a week at our house and the only way we can get them to eat carrots.

Marinate chicken (we use only mid joint wings) with dark soy sauce (a thicker type would be better)and oyster sauce for about 1/2 hour.

Heat a wok, pour a little oil and stir fry garlic and chicken til half cooked. Transfer it to a claypot or pot, add enough water to just cover the chicken. Add carrots (baby carrots for us) and a can of button mushrooms without the water and let it simmer on small heat for at least 1/2 hour.

If you like it thicker, add a little cornflour and water to the wok used for stirfrying the chicken and add it to the chicken when it's almost ready. We usually add a little pepper and a teaspoon of concentrated chicken stock as well.
