Have some pork steaks in the freezer that need to be used but don'tknow what to do with them.  Any simple ideas?Huh?

A family favourite is to fry the pork steaks in butter and then serve with a spicy pepper sauce.  A healthier alternative is to bake them in the oven tho'.  but I like the taste that the butter gives to the pork.

Treat them as pork chops (which is what they are). Brining them will add some moisture, especially for very lean pork. Add salt to water until it's about as salty as sea water, then add sugar until it's a little bit sweet (this is a matter of personal taste. The salt is what does most of the "moistening"). Soak the pork in the brine solution overnight, then dry off and cook.

 Agree on the brine. If they are thick, consider stuffing them with some diced apple, lightly cooked bacon, perhaps a small diced shallot, thyme and sage, salt and pepper. Cook the filling first first, maybe 6-8 minutes or when apple starts to get tender. Save the pan and deglaze it and use for jus.

OR you can grill and make a quick sauce with frozen or canned cranberries, some red wine and chicken stock, a bit more brown sugar and again thyme. Add butter after you reduce it if you like that glossier look.

I like to fry them to brown slightly and then make a gravy, put it all in a casserole dish and bake in the oven for about 30-40 mins and then serve with potatoes and veg of your choice.
