Its not a soup, but it works good. I have tried to make soup several times (try about 4)in the past and never has it worked out.
For the pot pie:
You need a pie crust (or two) with the dough lids. The same one you use for any old pie will work just fine.
In a pan make a simple roux by mixing some flour and oil and browning it over a medium heat. The more brown the more rich. I like mine a medium brown. Should take about half an hour or so, but be careful to stir constantly and do not leave unattended. Its very easy to burn so be mindful of the heat.
Salt and pepper to taste and then add turkey broth, and if you don't have that use chicken broth.
I like carrots, onions, round green peas, maybe a little celery, and maybe one potato. All should be chopped to smaller bite size pieces.
In a seperate pan sautee your veggies until they are 3/4 done and then add to your roux mix.
Tip: Start with your potatoes and carrots first because they take longer to sautee. Then later add in the celery, and lastly peas.
Your roux/broth mix should be slightly runny. Not too thick or it will be dry.
Add in dry parsley if you would like.
Add a cup or two of chopped turkey meat.
Pour the entire mixture into your pie crust and put the dough lid on it and seal it. Bake at 350F until golden brown.

If you like congee, or Chinese rice porridge/soup, then that's a possible use for your turkey carcass. For many Chinese-Americans, it's long been a day-after-Thanksgiving staple. You can google "Turkey jook" and find several variations out there. It's quite easy to find all the necessary ingredients here in Singapore.
