cooking mussels for the first time and did all the research-not to buy ones that are open etc went to cold storage and suddenly realised that most of the mussels in the pack they were selling were open and would not close on tapping.
is there some mistake in my understanding? or is there some other place one can safely buy mussels..plz help as hubby is a big fan and really want to treat him with home cooked mussels :-)

I bought mussels in CS and had no problem.  Huh  They were packed so tightly that I don't think could move - when I got home I put them in a bowl of water with a pinch of flour. After a while there were only one or two that remained open so I discarded them. The rest were fine and yummy!

They seem to consume it and it cleans out the grit/sand. Then you need to rinse the mussels again before you cook them.

Unfortunately I think it's not easy to get the fresh ones here, even from the wet markets. Coming from Japan I am also a huge seafood lover (clams and mussels especially) but sadly, I don't get them much here. Sometimes I will go to the wet market and buy 1-2 kg of mussels but hey, a few bad ones in there would spoil the whole pot... I have tried tapping and I have also asked the sellers to select the "good ones" for me but the results have not been satisfying at all.

The best way to do it is to, after soaking them in the salt water for about 5-10 min, "smell" all of them one by one. The one that gives you the "fishy" smell is the one that you need to separate from the rest... (if you hate to just throw it away). If it gives a "stench" smell, throw away immediately.

It takes lots of effort to have fresh and great mussels/clams here...but it's worthwhile if you are the seafood lover  Grin

what about that lovely fish shop up at Greenwood, beside Cafe Iguana ?  Fab for all things fresh and fishy incl oysters.

An old thread revisited but you can buy the most amazing live fish / crabs / mussels etc at Turf City Fish Market.

The Seng Shiong markets have tanks of fresh fish, mussels, clams, etc.
