It is predominantly fish which has been minced and then reformed with salt. So it will contain more water than say a slice of seabass.

fishcake consists of processed fish mixture; therefore seems unhealthy to me

Depends how you cook them. They are just fish, water and salt. Still healthier than beef burgers.

You used to be able to watch them being freshly made in the wet markets - quite fascinating to watch. Fresh fish filleted, meat scraped off and minced, then seasoned and mixed (like kneading dough) to create the bouncy texture, then either hand or machine shaped.

Then you buy a bag of 10 or 20 for cheap!

fish, salt and water.  there's msg and preservatives too.  read the packet.  my children like them in soup but apart from the 50-60% fish, the rest is pretty unhealthy.

after finding out from watching jamie oliver how chicken nuggets are made, i am not game enough to buy processed food anymore.

You'll find the whole range from mostly fish to only a small percentage - just as with sausage.  I sampled one in the local Fair Price (giveaways) and I almost couldn't keep it down.  But it was a cheap one.

If you buy the freshmade ones from wet markets, there are no preservatives other than salt for seasoning. And yes, I forgot there is flour as well.

I don't buy the prepacked stuff  from supermarkets. They never look very good to me.
