I just use the Farmer's union greek yoghurt, and it turns out really well.

Thanks, actually had the regular farmers union yogut at home, strained it for a couple of hours to thicken it and it turned out well too.... Wink

Here's a new brilliant straining trick.... put the yogurt in a clean towel and strain it in the salad strainer! Saw I guy do this on a cooking show the other day and it worked really really well. Thought it was a brill idea!

Do you mean the salad spinner for getting the water off leaves?  If so, do you actually spin the yoghurt?

Yes, you line the spinner with a tea towel, spoon the yogurt in and spin, spin, spin.... I haven't tried it myself as I haven't got a salad spinner, but I saw it on some Masterchef or Topchef program. One of the contestants tried it and it worked and the professional chefs thought it was a brilliant trick!

There's a very pleasant new Greek restaurant on Upper Bukitimah.  Nice tzatziki sauce on their gyro.
