 I have started to notice spots and marks on my knives and cleaver, much like water spots, though I wash and dry them immediately. Any ideas would be much appreciated!

The spots on anything... glass, knives,even after washing your car...

Its harmless, but its caused from minerals in the water. If you washed in 100% filtered water it would help prevent it...but is not nessesary.

Just wipe them clean after they air dry.

Yes

Stainless is useless. The blades don't keep their edge for long and those knife sharpening gadgets end up giving you a bevelled edge which deteriorates over time. Best to buy knives with a mix of chromium/molybendium. This is why Trident, F-Dick etc are more expensive, the quality of the steel. Btw, invest in a steel as well.

you can buy stainless steel cleaner at department stores. It removes the black which is oxidization on the steel. Use sparingly with a soft cloth and your cutlery will look like new.
