Has anyone got a good recipe for using udon noodles? I made something the other week, like a soup with some curry paste and veg and that was nice, but probably not very traditional. Any new ideas would be welcome - thanks.

What kind of noodles do you have at hand? The already boiled type or the dry type. If you have the already boiled type then you can make a yaki udon or stir fried udon. Get some sliced pork belly or the like(even sliced sausages will do), some vegetables(cabbage, carrots, onions etc.)and cut them into small pieces. In a frying pan, pour a few spoons of cooking oil and cook the meat and vegetables, then put in the udon. If the udon seems to be stuck together add a little bit of water so that the noodles 'loosens' up. Season with soy sauce and if you have some of the powder dashi a dash of that would be nice. Top with bonito flakes. The Japanese Bulldog brand sauce can also replace the soy sauce.

Ingredients needed
8 ounces chicken breast
2 teaspoons dark soy sauce
2 teaspoons Chinese rice wine or dry sherry
1/2 teaspoon salt
Pepper, to taste
Pinch of cornstarch
Other:
1/2 pound udon noodles
1 1/2 teaspoons sesame oil, or as needed
1 cup shredded cabbage
1 large clove garlic, peeled and minced
1 green onion
6 tablespoons oil for stir-frying, or as needed
1 tablespoon hoisin sauce, mixed with 1 1/2 tablespoons water
Extra soy sauce, salt or sugar for seasoning, as desired
