Herbs de Provence isn't an herb, it's an herb mixture consisting of thyme and rosemary at minimum, and typically adding basil, majoram, savory, bay leaf, and sometimes lavender. Different vendors (and chefs) create their own versions by varying the amount of the different herbs, so don't be surprised if the mixture you buy here isn't quite what you're used to tasting elsewhere. Dried herbs are typically used, but fresh herbs also can Smiley

I'm not sure either herbs de provence or lavender can be considered "old fashioned."

The term "Herbs de Provence" was coined fairly recently (1970s), although various mixtures of the herbs have been used for probably hundreds of years. The mixture defined in Larousse Gastronomique doesn't include lavender (thyme, rosemary, bay, basil, savory), and at least one source says it was added to satisfy tourists who saw the plant as emblematic of southern France in the summer. That said, I also prefer it with lavender.
