And how to make brandy sauce I can't find it in the shops.

There are loads of tips for cooking a succulent turkey. TLC channel are showing Jamie Oliver and Nigella Lawson Christmas programmes each night about 10pm - you could get some ideas there. Nigella once said she gives her turkey a 'bath' on Christmas Eve - fills a big bucket with water and adds things like cloves, bayleaves etc and leaves it in there overnight soaking...........however, I don't think that would work here as it's not cold enough to leave a turkey out of the fridge overnight and most people don't have a fridge big enough to get all of that lot in there.
Jamie, the other night on his prog, made this butter/cranberry/sage mix and stuffed it underneath the skin on the turkey - he reckoned that kept it moist.
Some people cook them upside down half way and then turn over. Some people reckon basting doesn't help and some do. I'm a fan of adding strips of streaky bacon to the top of my turkey to keep the top from cooking too quickly and drying out but I might go for the under-skin butter mix this year and see what that is like.
As for stuffing - I like sage and onion - nothing too fancy for me and I don't much like fruit and meat so I won't be adding cranberries to any butter-under-the-skin mix that I make.

Soak in cold water overnight, from frozen is okay.
Also cook in an oven bag.
Best stuffing Paxo Sage and Onion.
